In spring 2020, I self-isolated at my dad’s house in northern Maine, where I normally come each summer for lake time and lobster rolls. But during lockdown, the lake was frozen solid and my favorite lobster roll spot was closed indefinitely, so I ordered the brown butter lobster roll kit from Eventide Oyster Co. instead.
Eventide is excellent. The service is great, the food well crafted, the drinks are fabulous, and the oysters offerings are best in the world. We loved the lobster stew: invented the “DLT” - order the lobster stew with a lobster roll, then add the lobster... from the roll to the stew and dunk the steamed bun from the roll in the broth. Heaven.
In a large soup pot, add both the butter and reserved bacon fat over medium heat. Add onions and potatoes once the butter has melted. Saute for roughly 6 to 8 minutes until lightly caramelized.
